Prawn and Eggplant Fried Rice

Ingredients used in Prawn and Eggplant Fried Rice
• Coconut (grated) - 1/2 cup.
• Coriander leaves (chopped) - 1 bunch.
• Green chilies (chopped) - 3 numbers.
• Salt - to taste.
• Onions (chopped) - 2 numbers.
• Whole garam masala (each) - 2 numbers.
• Bay leaves - 2 numbers.
• Ghee - 2 tablespoons.
• Pepper corns - 5 numbers.
• Rice - 2 cup.
• Eggplant - 150 grams.
• Prawns - 250 grams.
• Ginger garlic paste - 1 tablespoon.
• Turmeric powder - 1/4 tea spoon.
• Chili paste - 1 tablespoon.
• Garam masala powder - 1 tablespoon.
• Coconut milk - 3 tablespoons.
Method:
  • Heat ghee in a pan, add pepper corns, bay leaves, whole garam masala spices (cardamom, cloves, cinnamon stick), chopped onions, salt and cook it by stirring occasionally till onions turn to golden in color.
  • Then add green chilies, chopped coriander leaves, grated coconut, ginger garlic paste, turmeric powder, mix it well.
  • To it even add coriander powder, chopped eggplant, cook this also for few more minutes on a slow flame.
  • After that add prawns, chili paste, garam masala powder, coconut milk, and cook it with closed lid for another 5 minutes.
  • Later also add cooked rice, toss it and cook it with closed lid for a minute on a slow flame. Switch off the flame.
  • At last, garnish with chopped coriander leaves, squeeze lemon juice and mix it.

Delicious Prawn and Eggplant Fried Rice is now ready to serve.
