PINEAPPLE KADI ANANAS KADI

Ingredients used in PINEAPPLE KADI ANANAS KADI
• Red chilli powder - 1/2 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Hing (asafoetida) - 1 pinch.
• Green chillies (crushed) - 1/2 tea spoon.
• Curry leaves - 1 spring.
• Fenugreek seeds - pinch.
• Cloves - 4-5 numbers.
• Cumin seeds - 1/2 tea spoon.
• Mustard seeds - 1/4 tea spoon.
• Oil - 1 tablespoon.
• Pineapple (cut into small pieces) - 1/2 cup.
• Water - as required.
• Salt - to taste.
• Sugar - 1 pinch.
• Coconut milk - 2 cups.
• Besan atta (chickpea flour) - 1 tablespoon.
Method:
  • Heat oil in a pan and when it gets hot enough, add mustard seeds, when they start crackling, add cumin seeds, cloves, a pinch of fenugreek seeds, few curry leaves and crushed green chillies, saute and add pineapple pieces and mix.
  • Add a pinch of hing, turmeric powder and red chilli powder.
  • Add little water and cook the pineapple pieces for about 2 minutes.
  • Add salt to taste and sugar (if you are adding 1 tsp of salt then add 2 tsp of sugar) add 2 cups of coconut milk and bring to a boil.
  • Add besan atta (chickpea flour) in little water and add this to the coconut milk mixture little by little stirring continuously until it slightly thickens.
  • After cooking for about 1 or 2 minutes, the mixture will thicken.
  • The consistency should be that of a kadi or soup. It should not be too thick.
  • Switch off the flame and the Ananas kadi is ready.

Though I m from Maharashtra, I never had this kadi. The dishes which has coconut milk are consumed in western part which is kolhapur, ratnagiri, goa and called kokni, malwani dishes.
