Ingredients used in pepper chicken chettinad
• Crushed pepper - 1 tea spoon.
• Coriander powder - 2 teaspoons.
• Cloves - 3 numbers.
• Cinnamon stick - 2 numbers.
• Chicken - 500 grams.
• Cardamom - 2 numbers.
• Cumin seeds - 1/2 tea spoon.
• Cumin powder - 1 tea spoon.
• Curry leaves - 1 spring.
• Red chilli powder - 1 tea spoon.
• Onion (chopped) - 1 large.
• Oil - 2 tablespoons.
• Mustard seeds - 1/2 tea spoon.
• Green chillies - 2 numbers.
• Ginger garlic paste - 1 tea spoon.
• Fresh chopped coriander - 1 tablespoon.
• Tomatoes - 2 numbers.
• Salt - to taste.
Method:
  • Heat the oil in a large pan, add mustard, cumin, whole garam masala, then add the onions, salt saute it.
  • Add turmeric powder, ginger garlic paste, curry leaves, green chili and saute for a while.
  • Then add tomatoes, red chili powder, coriander powder, cumin powder mix well and cook.
  • To it add the chicken to the frying pan and mix well, cover and cook over a low-medium heat for 10-15 minutes or until the chicken is cooked through.
  • When the chicken is almost done, add the ground pepper to the mixture and mix well.

Chettinad cuisine is famous for its use of a variety of spices used in preparing mainly non-vegetarian food. This Chettinad delicacy is known worldwide for the spicy Chettinad masala taste blended well with the tender chicken. The dishes are sizzling and strong with fresh ground masalas, topped having a steamed egg that's generally regarded as important portion of meals. Additionally, they use a variety of sun dried meats and salted vegetables, reflecting the dry environment of the region. Chettiars don't eat beef and pork, they are limited to fish, prawn, chicken, lobster, crab and lamb.

 

Chettinad is a place from the Sivaganga district of Tamil Nadu state in India. Chettinad is famous due to its Chettinad delicacies, Estates and Temples. Chettinad is among the driest areas of southern India.

 

Chettinad cuisine is the most spicy, oily and aromatic cuisine of India. In Chettinad cuisine, the key spices are Marathi mokku (dried flower pods), anasipoo (star aniseed) and kalpasi (a lichen called the "black stone flower", also referred to as dagad phool). Additionally, tamarind, whole red chilies and saunf are used together with cinnamon, cloves, bay leaf, peppercorn, cumin seeds and fenugreek.

 

A few of the well-known Chettinad recipes are varuval. poriyal, and kuzambu. The majority of the dishes are consumed with rice and rice based accompaniments for example dosais, appams, idiyappams, adais and idlis. This delicacy has lots of versions of fish, mutton, and chicken dishes, in which the Chicken Chettinad is a specialty.
