PATHISHAPTHA WITH COCONUT

Ingredients used in PATHISHAPTHA WITH COCONUT
• Milk - 250 ml.
• Coconut(grated) - 1 tablespoon.
• Sugar - 2 teaspoons.
• Khoya - 1/4 cup.
• Cardamom powder - 1/2 tea spoon.
• Refined flour - 1/2 cup.
• Rice flour - 1/2 cup.
• Semolina - 1-2 tablespoons.
• Ghee - 2 tablespoons.
• Palm jaggery - 1-2 tablespoons.
• Nuts and raisins - 1 tablespoons.
Method:
  • Simmer milk in a hot pan till it gets thick, then add freshly grated coconut, sugar and cook it till it becomes a thick paste.
  • Now add khoya, cardamom powder and mix it well before transferring into a bowl.
  • For pancakes take equal quantities of flour and rice flour in a bowl then semolina, little quantity of ghee, palm jaggery,water and mix it into a thin batter.
  • Heat the pan and apply some ghee then pour the batter in center and spread it across.
  • Now take some prepared mixture and make into cylinder shape and place it in one corner.
  • Now with the help of a spatula roll out very carefully and cook it for a while.
  • Make all the pancakes with the batter with other variations by adding nuts and raisins with some more ghee.
