Ingredients used in Muttiya Nu Ras |
• Spring onions (chopped) - 2 bunch. |
• Coconut (grated) - 2 tablespoons. |
• Sesame seeds - 1 tablespoon. |
• Sugar - 1 tea spoon. |
• Salt - to taste. |
• Wheat flour - 1/2 cup. |
• Turmeric powder - 1 tea spoon. |
• Cumin seeds - 2 teaspoons. |
• Red chili powder - 2 teaspoons. |
• Coriander seeds - 1 tablespoon. |
• Chick pea flour - 1/2 cup. |
• Water - as required. |
• Oil - as required. |
• Peanuts - 2 tablespoons. |
• Coconut (chopped) - 1/2 cup. |
• Mustard seeds - 1 tea spoon. |
• Hing - 1 tea spoon. |
• Tomato puree - 1/2 cup. |
• Coriander powder - 1 tea spoon. |
• Tamarind pulp - 1/2 cup. |
• Fenugreek seeds - 1 tea spoon. |
• Onions (chopped) - 1 number. |
• Curry leaves - 3 springs. |
Method: |
- Take chopped spring onions in a bowl, add freshly grated coconut powder, sesame seeds, sugar, salt, wheat flour, turmeric powder, cumin seeds, red chili powder, crushed coriander seeds, chickpea flour, baking soda and mix it to a soft dough by adding required amount of water.
- Take small portions of the prepared mixture, shape them into patties, deep fry in hot oil and transfer to a plate.
- Heat oil in a pan, add mustard seeds, cumin seeds, fenugreek seeds, chopped onions, curry leaves, turmeric powder, hing, sauté it, add the fine paste of coconut and peanuts, cook on a slow flame.
- Now add tomato puree, red chili powder, coriander powder, tamarind pulp, water, salt and cook with closed lid for about 5 minutes.
- Add little sugar, fried patties and cook for a minute.
