MULTANI CHANNA PULLAO

Ingredients used in MULTANI CHANNA PULLAO
• Green cardamom - 2 numbers.
• Black cardamom, split open, but with all seeds intact - 1 number.
• Cinnamon stick - 1 number.
• Cloves - 2 numbers.
• Bay leaf - 1 number.
• Black peppercorns - 8 numbers.
• Cumin seed, crushed - 1 tea spoon.
• Dried crushed red chillies - to taste.
• Salt - to taste.
• Chicken broth, or water(chicken broth preferred) - 3 cups.
• Basmati rice - 2 cups.
• Medium sized onion, thinly sliced - 1 number.
• Vegetable or canola oil - 3/4 cup.
• Raisins - 1 cup.
• Cooked, drained, plain , channas(chickpeas) - 1 can.
• Fresh ginger, two inch piece,peeled and julienned - 1 number.
Method:
  • Wash the rice in colander and soak in water for at least halfhour.
  • Drain in a colander when ready to use only. Heat oil in a large enough preferrebly nonstick pon.
  • Add the onions and fry in oil till they start to turn golden. add all the spices and the ginger and fry till they are fragrant, but taking care not to burn the onions or the spices.
  • Keep the heat to a medium. add the drained chickpeas and fry till nicely coated with spices, about a minute. add the drained rice and stir gently. add the water and cook till the water is absorbed.
  • Now lower the heat and gently stir in the raisins.
  • Cover and cook on a very low heat till the rice is done.

Fluff the rice and serve hot.
