Ingredients used in mixed vegetable pickle
• Gingelly/sesame oil ( you can use vegetable oil also) - 1 cup.
• Haldi - 1 teaspoons.
• Methi powder - 3 teaspoons.
• Salt - 2/3 cup.
• Red chilli powder - 1 cup.
• Lemons - 12 numbers.
• Chopped vegetables - 5 cup.
• Mustard seeds - 1 teaspoons.
• Hing powder - 3 teaspoons.
Method:
Method Wash well amp; drain the vegetables. Cut them. Chop 4 lemons amp; squeeze the other 8. Heat oil amp; temper as given. (To temper: Gingelly oil - 1 cup Mustard seeds - 1 tsp Hing powder - 3 tsp) Add the vegetables amp; lemon pieces amp; fry a little. Then add chilli powder, salt, haldi amp; methi powder. Fry for a while. Remove from flame amp; cool. Add lime juice amp; mix well.. Oil should cover completely. Peas, raw manathakkali amp; 50 gms garlic ( peeled) can be added raw.
