Mexican Tomato Rice with Beans

Ingredients used in Mexican Tomato Rice with Beans
• Cumin powder - 1 tea spoon.
• Tomato puree - 1 cup.
• Salt - to taste.
• Pepper crushed - 1 tea spoon.
• Onion chopped - 2 numbers.
• Garlic crushed - 1 tablespoon.
• Bay leaf - 2 numbers.
• Olive oil - 3 tablespoons.
• Water - 1 3/4 cup.
• Rice - 1 cup.
• Stock - 1 cup.
• Red & green bell pepper - 1 number.
• Pinto or kidney beans - 100 grams.
• Oregano - ½ tea spoon.
Method:
  • Heat olive oil in a pan add bay leaf, crushed garlic, chopped onions, saute it.
  • The onions and garlic are slightly cooked, add crush pepper, salt, tomato puree, cumin powder, oregano (optional) once it comes to boil, add boiled beans and add vegetable stock, when it boils add soaked rice, cook till almost done.
  • Garnish withred and green bell pepper.
