Ingredients used in MEXICAN RICE
• Red chilli powdwr - to taste.
• Potatos - 2 numbers.
• Onions - 3/4 cup.
• Tomatos - 1 cup.
• Capsicum - 3/4 cup.
• Rice(uncooked) - 2 cups.
• Dhania powder - 1 tablespoon.
• Oil - as required.
• Ketchup - 2 teaspoons.
Method:
  • Cook the rice .take it when it is slightly uncooked.
  • Cut all the vegetabes (chop in to small squares).
  • Boil potatos separately in the microwave for 8 minutes.
  • Mash potatos and keep aside.
  • Take the chopped vegetables and stir fry in oil and cover with lid for 7-8 minutes.
  • Add salt ,chilli powder and dhania powder to the vegetables and add the cooked rice .mix well without breakin the rice.
  • Take out the rice in a baking dish .
  • Now take the mashed potatos and add to it- salt, mirchi, pav bhaji masala and 2 tablespoon of ketchup.mix well.
  • Top these potatos as a layer o top of the rice .Add cheese and bake til golden brown in colour.
