Ingredients used in Methi Kichdi
• Coriander leaves - 1/4 cup.
• Mustard seeds - 1 teaspoons.
• Turmeric - 1/2 teaspoons.
• Cinnamon - 1 piece.
• Grated coconut - 3 tablespoons.
• Methi seeds - 1/2 teaspoons.
• Cumin seeds - 1 teaspoons.
• Coriander seeds - 2 teaspoons.
• Red chillies - 4 numbers.
• Onion - 1 big.
• Basmati rice - 1 cup.
• Water - 2 cup.
• Oil - 3 tablespoons.
• Salt - to taste.
Method:
Fry all the ingredients from red chillies to cinnamon and grind them into a fine powder. Heat oil in a cooker and add mustard seeds. When the mustard seeds crackle add thinly sliced onion and fry until the onion turns golden brown. Now add the ground powder, turmeric and fry for few minutes. Finally add rice, salt, water and coriander leaves. Close the lid and cook for about 3 to 4 whistles. Serve hot with raitha.
