Ingredients used in Malai chicken
• Chicken (cut into pieces) - 1 kg.
• Onion - 1 number.
• Red chilies - 1 number.
• Cloves - 2 numbers.
• Cardamom pods - 2 numbers.
• Cinnamon stick - 1 small.
• Bay leaf - 1 leaf.
• Cilantro leaves - 1 tea spoon.
• Coriander powder - 1 tea spoon.
• Cumin powder - 1 tea spoon.
• Garam masala powder - 1 tea spoon.
• Red chilli powder - 1(1/4) tea spoon.
• Turmeric powder - half tea spoon.
• Tomato paste - 1 cup.
• Whipped cream - 1 tea spoon.
• Ginger paste - 1 tea spoon.
• Garlic paste - 1 tea spoon.
• Salt - to taste.
• Cooking oil - to taste.
Method:
  • Heat oil in a pot on medium heat. Add the red chilies, cloves, cardamom pods, cinnamon stick, and bay leaf. Fry until the bay leaf turns golden brown.
  • Add chopped onion and saute it for few minutes. Add ginger paste and garlic paste, again fry for another 4 to 6 minutes.
  • Add chicken pieces and fry for another 5 minutes or so. Sprinkle on top the salt, red chilli powder, coriander powder, cumin powder, and turmeric powder and mix it well.
  • Add 1 glass of water. mix and cook for about 20 minutes on medium flame or until chicken is almost done.
  • Add can of tomato paste, mix and cook on low heat until chicken is well done.
  • Finally add the whipped cream and cook for another 5 minutes. Add garam masala powder and coriander leaves and let it cook for another couple minutes and remove from heat.
  • Tasty and delicious Malai Chicken is ready to serve.
