Ingredients used in Khachapuri
• Butter (again /softened) - 1 tablespoons.
• Muenster cheese (grated) - 1 lbs.
• Salt - 1 teaspoons.
• Butter (softened) - 4 tablespoons.
• All purpose flour - 1 1/2 cup.
• Active dry yeast - 1 bag.
• Lukewarm milk - 1/2 cup.
• Egg (very small) - 1 small.
• Egg (lightly beaten for brushing pastry) - 1 small.
Method:

put 1/4 cup of the milk ,the yeast and 1/4 tsp of the sugar into bowl and let stand a few minutes (3) and then stir to dissolve the yeast,. make a well in the flour in a bowl,. pour 1/4 cup milk, yeast milk mixture and remaining sugar, the salt and the butter into center and knead this into a soft dough knead 10 minutes on a very lightly floured board/. set dough in a lightly oiled bowl and sprinkle with flour, covered loosly with a kitchen towel,. let rise in a semi warm place until the dough doubles in bulk,. punch down the dough and let rise another 30 minutes ,. prepare cheese filling by combining cheese, butter (2nd measure) and the small egg. mix until very smooth but not over beaten.. punch down dough after second rise and roll to 1/16 thin and cut 6 circles with a knife or biscuit cutter or large rim glass.. (i have done these much smaller for cocktail parties to great success! ) put a Tablespoon of filling in the center and smooth to within 1 border uncovered. DRaw up the dough towards the center, over the filling in 6 even pleats,. brush with beaten egg and allow to rest 10 minutes before baking on a cookie or baking sheet in a preheated 375 degree F) Oven. 20-25 minutes or until golden brown,. a middle to upper shelf will help bottoms from over browning,.
