Ingredients used in KARELA PULUSU
• Bitter gourd - 3 numbers.
• Salt - to taste.
• Turmeric powder - 1/2 tea spoon.
• Mustard seeds - 1/2 tea spoon.
• Fenugreek seeds - 1/4 tea spoon.
• Onion(chopped) - 1 cup.
• Ginger garlic paste - 1 tea spoon.
• Curry leaves - 1 spring.
• Red chili powder - 1 tea spoon.
• Coriander powder - 1/2 tea spoon.
• Desiccated coconut powder - 1 tablespoons.
• Tamarind juice - 1 cup.
• Sugar - 1/2 tea spoon.
• Roasted sesame seeds powder - 1/2 tablespoon.
• Oil - 2-3 tablespoons.
• Shallots - 1/2 cup.
Method:
  • Peel bitter gourd slightly and cut into lengths of 1 ½ inch.
  • Take a bowl and add bitter gourd pieces, little salt, turmeric powder and mix, keep aside.
  • Heat oil in a pan and add mustard seeds, fenugreek seeds, onion and saute it.
  • To it add ginger garlic paste, curry leaves, turmeric powder and saute it.
  • Now squeeze water from bitter gourd.
  • To the above mixture pan add bitter gourd, shallots, red chili powder, coriander powder, salt and mix it later cook with lid on it.
  • Add desiccated coconut powder, tamarind juice and cook it for 5 minutes with lid on it.
  • Atlast add little sugar, roasted sesame seeds powder and mix it, later cook for 1 minute.

Now kareka pulusu is ready to serve with rice or roti.
