Ingredients used in GRILLED BABY CORN EGG PLANTAIN |
• Vinegar - 2 teaspoons. |
• Soya sauce - 1 tea spoon. |
• Chili flakes - 1 tablespoon. |
• Spring onions - 1 tea spoon. |
• Sugar - 3 teaspoons. |
• Salt - to taste. |
• Oil - 6 teaspoons. |
• Baby corns (1 ½ inches) - 1 cup. |
• Aubergine (eggplant) - 1 cup. |
• Tomato ketchup - 2 teaspoons. |
• Tomatoes - 1/2 number. |
• Chilli sauce - 1 tea spoon. |
• Chilli pepper powder - 1 tea spoon. |
• Ginger(chopped) - 1 tea spoon. |
• Garlic(chopped) - 1-2 teaspoons. |
• Coriander leaves(chopped) - 1 tablespoon. |
• Onions(chopped) - 1 tablespoon. |
• Green chillies(chopped) - 1 tea spoon. |
• Capsicum juliennes - 1/2 number. |
• Boiled noodles - 1/2 cup. |
• Green chilli sauce - 1 tea spoon. |
Method: |
- Take a bowl add vinegar, soya sauce, chilli flakes, chopped spring onions, sugar, salt, oil and mix it well.
- Then add baby corns, aubergine (eggplant) and mix it nicely. 3. Leave it for 15min for marinated.
- After 15 minutes skewer it one by one of baby corn and eggplant.
- Then place it on hot grill pan and add oil to it.
- Keep a lid on top of it and cook it on low flame.
- For barbecue sauce: Take a bowl add tomato ketchup, chopped tomatoes, chilli sauce, chilli pepper, vinegar, sugar, chopped ginger, chopped garlic, chopped coriander and mix it nicely.
- Remove baby corns from pan and transfer into a plate.
- After few minutes remove eggplant and transfer into a plate.
- In the same pan add oil, chopped garlic, chopped onions, chopped green chillies, capsicum juliennes, noodles, green chilli sauce, chopped coriander leaves, soya sauce and saute it.
- Simmer it and cover it with a lid.
- Then keep cooked baby corn and eggplant on a pan.
- After 2 minutes transfer into a serving plate.
- Garnish with spring onion.
Now grilled baby corn eggplant is ready.
