Ingredients used in DAL AND BITTER MELON CURRY 1
• Bitter melon - 100 grams.
• Oil - as required.
• Mustard seeds - 1/4 tea spoon.
• Cumin seeds - 1/4 tea spoon.
• Red chillies - 3 number.
• Chana dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Asafoetida - 1 pinch.
• Turmeric powder - 1/4 tea spoon.
• Curry leaves - 2 springs.
• Onion - 2 number.
• Chilli powder - 1 tea spoon.
• Tomatoes - 3 number.
• Tamariend juice - 1/4 cup.
• Toor dal - 1/4 cup.
• Coriander leaves - 1/2 bunch.
• Salt - to taste.
Method:
  • Scrape out the upper layer of bitter melon and cut into lengthwise by scooping out the seeds.
  • Heat oil in a kadai and fry the bitter melon pieces till it is brown in color. Remove the excess oil and add mustard seeds when they crackle add cumin seeds, red chilli, chana dal, urad dal, asafoetidasaute it for 2 minutes .
  • Then add turmeric, curry leaves, onions, saute the onions till it is cooked.
  • Add chilli powder, tomato pieces, tamarind juice and cook it with closed lid till the tomatoes are soft.
  • In this add fried bitter melon, 80% cooked toor dal, freshly grated coconut, cook this for 2 minutes with the lid on.
  • Garnish with coriander leaves and serve with chapati or roti.
