Ingredients used in Crisp-Fried Mutton
• Raw mutton (minced) - 250 grams.
• Ginger (chopped) - 1/2 tea spoon.
• Mutton (minced cooked) - 250 grams.
• Sesame oil - 1/4 tea spoon.
• Eggs (lightly beaten) - 2 numbers.
• Cornstarch (cornflour) - 4 teaspoons.
• Salt - to taste.
• Oil - as required.
• Soya sauce - 2 teaspoons.
• Spiced pepper-salt - 1/2 tea spoon.
• Spring onion (chopped) - 1/2 tea spoon.
• Ajinomoto - 1/4 tea spoon.
• Salt - to taste.
Method:
  • Mix together the minced mutton, eggs, salt, soy sauce, spring onion, ginger, sesame oil, Ajinomoto(optional), and cornstarch.
  • Stir vigorously in one direction for 2 minutes, or until stiff.
  • Shape into oval balls and roll in cornstarch.
  • Flatten the balls slightly and make criss-cross marks on top.
  • Heat the oil in a wok add the mutton balls and deep-fry until brown.
  • Remove, drain, and cut into strips.

Sprinkle with the spiced pepper-salt and serve
