Ingredients used in Chintaku Podi Tho Mamsam Kura
• Turmeric powder - 1 tea spoon.
• Salt - 3 tablespoons.
• Garam masala powder - 1 1/2 tablespoons.
• Coriander powder - 2 tablespoons.
• Redchilli powder - 2 tablespoons.
• Bay leaves - 2 leaf.
• Black elachi - 1 number.
• Cloves - 4 numbers.
• Cardamons - 3 numbers.
• Cinnamon - small piece.
• Ginger garlic paste - 4 tablespoons.
• Mint leaves - 10 grams.
• Coriander leaves - 10 grams.
• Curry leaves - 10 leaf.
• Onion - 1 small.
• Tender mutton - 500 grams.
• Dried tarmarind leaves powder - 3 tablespoons.
• Oil - 4 tablespoons.
• Green chillies - 3 numbers.
• Water - 100 ml.
• Raw mango (slices) - 1/2 cup.
Method:
  • Clean tender mutton keep aside.
  • In that mutton add salt, turmeric powder, red chilli powder, coriander powder, ginger garlic paste mix them all well.
  • Now take a pressure cooker pour oil in it.
  • When its hot add cinamon, cloves, cardamon, bayleaves, black elachi fry them.
  • Now add curry leaves, chopped mint leaves, chopped coriander leaves fry them.
  • After that add onion slices(cut in lenght wise) fry them well.
  • Add green chillies and fry it well.
  • Add the marinated mutton to it fry it nicely.
  • Now,add water let it boil. when it boils nicely, close the pressure cooker lid place weight on it.
  • On high flame cook the mutton till we get 6 whistles.
  • Let it cool for 5 minutes.
  • Now,again put the cooker on flame wait till the curry boils.
  • When it was boiling now add the secret ingredient i.e., Dried tarmarind leaves powder, garam masala powder the raw mango slices(cut in lenghtwise) to it.
  • Now,close the cooker lid again cook it 4 till 1 whistle off the flame.
  • After 5 minutes you can open serve it in a curry bowl.

Garnish with coriander leaves serve hot with rice.
