Ingredients used in Kashmiri Mutton Curry Aab Gosht
• Milk - 250 ml.
• Cardamom crushed - 1 tea spoon.
• Cloves - 3 numbers.
• Cardamom - 3 numbers.
• Mace - 1 number.
• Salt - to taste.
• Fennel powder - 1 tablespoon.
• Ginger powder - 1 tea spoon.
• Garlic crushed - 4 numbers.
• Mutton - 500 grams.
• Brown onion paste - 1/2 cup.
• Pepper powder - 1/2 tea spoon.
• Ghee - 2 tablespoons.
• Water - as required.
Method:
  • In a bowl add water, mutton, crushed garlic, ginger powder, fennel powder, salt, mace, cardamom, cloves and mix it and put the lid on let it cook till the meat is tender.
  • In a bowl add milk, crushed cardamom, boil this reduce the milk half.
  • Heat ghee in another pan add brown onion paste, mutton pieces, cook it for some time.
  • Add pepper powder, salt, pour the reduced milk and mutton stock, cook this for 5 minutes in a slow flame, then switch off the flame.

Serve this cooked rice.

Chef you said that you added only fennel ginger powders and salt, but after you added the garam masala you said some people only like to add fennel ginger and cardamom, so do we add cardamom powder or not?

If my mom sees this she will blow her top............She is an Afghani and Aab Gosht is sort of their traditional dish and this is not at all how they make it.....Aas gosht means "Aab ie Water" and "Gosht ie Meat"...............no

made this for lunch. I boiled goat in a crock pot, added saffron to the milk reduction (which was a great idea!). overall it was mild and aromatic. but as far as mutton dishes go, I prefer vahchef's rogan josh recipe.?
