Ingredients used in Carrot Rice
• Onion - 1 numbers.
• Salt - 1 to taste.
• Ginger - 1 piece.
• Green chilli - 2 numbers.
• Cooked rice - 1 cup.
• Carrot - 2 numbers.
• Oil - 2 tablespoons.
Method:
  • Grate carrot finely. Chop the onion, green chilli and ginger finely.
  • Keep a pan on medium flame, pour oil and add mustard seeds urad dal, cumin seeds for tampering.
  • Add the chopped onions, green chilli and ginger and fry until it is light brown.
  • Add Salt and little turmeric powder for the flavour.
  • Then add the grated carrot and stir for a while and allow the carrot to half cook. Keep the flame in a medium so that it does not burn.
  • After 5 mins, add the cooked rice and mix well. Transfer to serving bowl and decorate with coriander leaves.
