Brinjal Omelet with Oats

Ingredients used in Brinjal Omelet with Oats
• Brinjal/vankaya - 1 number.
• Salt - to taste.
• Water - as required.
• Mixed herbs - 1/2 tea spoon.
• Eggs - 2 number.
• Onion (chopped) - 1/2 number.
• Pepper powder - 1 tea spoon.
• Cherry tomatoes (chopped) - 4 numbers.
• Cheese (grated) - 1 tablespoon.
• Oats - 1 cup.
Method:
  • Boil water in a pan, add oatsalong with little salt, cook well and keep aside.
  • Slice a brinjal into 4 with its ends intact, roast it on both sides by seasoning it with salt and mixed herbs.
  • Break open eggs in a bowl, add chopped onions, salt, pepper powder, give it a good mix and transfer the whole of this mixture to the same pan on top of the frying brinjal.
  • Now top the omelet with chopped cherry tomatoes, grated cheese and cook with a closed lid on slow flame.

Serve hot Brinjal Omelet with cooked oats.
