BENDI MADHUR KHADI

Ingredients used in BENDI MADHUR KHADI
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Fenugreek seeds - 4 numbers.
• Oil - 3 teaspoons.
• Green chillies(chopped) - 3 numbers.
• Onions(chopped) - 1 numbers.
• Curry leaves - 2 springs.
• Ginger garlic paste - 1 tea spoon.
• Turmeric powder - 1/2 tea spoon.
• Okra / bhindi(pieces) - 1 cup.
• Sambar powder - 1 tablespoon.
• Tamarind juice - 1 cup.
• Jaggery - 1 tea spoon.
• Coriander leaves(chopped) - 1/4 bunch.
• Salt - to taste.
• Rice - 2 tablespoons.
Method:
  • Soak the rice for 30 minutes, transfer it into a blender and blend into a smooth paste.
  • Heat oil in pan and add mustard seeds, cumin seeds, fenugreek seeds, green chillies, onions, salt, curry leaves and saute it.
  • Add ginger garlic paste, turmeric powder, okra and saute it and cook it with closed lid for 2 minutes on slow flame.
  • When the okra is 40% cooked, add sambar powder, tamarind juice, little water and cook it for 3 minutes.
  • Take 1 tablespoon of rice paste, mix it in ½ cup of water, this mixture to the above okra mixture and cook it.
  • Add jaggery, coriander leaves and mix thoroughly.
  • Now the bendi madhur khadi is ready to serve with rice.
