Ingredients used in Tiffin Center Sambhar
• Mixed vegetable - ½ cup.
• Onions chopped - 2 numbers.
• Cumin seeds - ½ tea spoon.
• Mustard seeds - ½ tea spoon.
• Oil - 1 tablespoon.
• Tomatoes chopped - 2 numbers.
• Turmeric powder - 1/4 tea spoon.
• Curry leaves - 2 springs.
• Compound hing - 1 piece.
• Jaggery - 1 tablespoon.
• Green chilly chopped - 3 numbers.
• Coconut chopped - 1 tablespoon.
• Rice - 1 tablespoon.
• Fenugreek seeds - 1/4 tea spoon.
• Toor daal - 2 tablespoons.
• Channa daal - 2 tablespoons.
• Coriander seeds - 1 tablespoon.
• Pepper corns - 1 tea spoon.
• Whole red chilly - 12 numbers.
• Tamarind juice - ½ cup.
• Salt - to taste.
Method:
  • Heat oil in a pan add whole red chilly, peppercorns, compound hing, coriander seeds, channa daal, toor daal, cook this till daal is golden in color.
  • Add fenugreek seeds, rice, cook this on a slow flame till raw flavor is gone.
  • Add chopped coconut, green chilly, curry leaves, turmeric powder, tomatoes, cook it for 3 minutes.
  • Switch off the flame, once the mixture is cool down put it in the blender and make a paste.
  • Heat oil in a pan add mustard seeds, cumin seeds, saute it.
  • Add chopped onions, curry leaves, salt cook this till onions are golden in color and Add finely chopped vegetables, saute it.
  • Add masala paste, water, tamarind juice, jaggery, let it boil for 20 to 30 minutes after that add chopped coriander.

Serve this with idly, dosa and vada.

I like this sambhar a lot, and love the aroma of compound hing and fenugreek seeds, both of them are very important ingredients used to make ayurvedic medicine that heal a lot of diseases.I'll make this with less chilli, I will pour 3 sambar spoo
