Ingredients used in Vineyard Minestrone
• Onion (chopped) - 1 number.
• Carrots (chopped) - 2 numbers.
• Celery ribs (chopped) - 2 numbers.
• Zucchini (chopped) - 1 number.
• Garlic (chopped) - 2 cloves.
• Vegetable broth - 6 cups.
• Red wine - 1 cup.
• Tomato (chopped) - 800 grams.
• Basil - 2 tea spoon.
• Marjoram - 1 tea spoon.
• Kidney beans - 500 grams.
• Shredded cabbage - 2 cups.
• Pasta - half cup.
• Water - 3 cups.
Method:
  • In a large pot, add onion, carrots, celery, zucchini, garlic, stock, tomatoes, water, red wine, and basil and marjoram. Bring to a boil.
  • Reduce heat to medium-low and simmer, partially covered, for 1 hour.
  • Add beans, cabbage and cook for 10 minutes.
  • Now add pasta and cook uncovered 10 minutes.

Serve.
