Vankaya Perugu Pachadi

Ingredients used in Vankaya Perugu Pachadi
• Big eggplant - 1/2 piece.
• Oil - 1 tablespoon.
• Mustard seeds - 1/4 tea spoon.
• Cumin seeds - 1/4 tea spoon.
• Green chillies (chopped) - 2 numbers.
• Curry leaves - 1 spring.
• Turmeric powder - 1/4 tea spoon.
• Onions (chopped) - 1 tablespoon.
• Yogurt - 1 cup.
• Salt - to taste.
• Coriander leaves (chopped) - 1 tea spoon.
Method:
  • Cook the big eggplant directly on the stove top. Switch off the flame and allow it rest.
  • Now, remove the skin, roughly chop eggplant and keep aside.
  • Take a bowl, add yogurt, salt, chopped eggplant, above tempering mixture and mix nicely.

Now, vankaya perugu pachadi is ready to serve with rice.
