Tunisian-Style Greens and Beans

Ingredients used in Tunisian-Style Greens and Beans
• Swiss chard leaves - 4 cups.
• Garbanzo beans (cooked) - 1 cup.
• Tomato - 1 cup.
• Onion - 1 number.
• Garlic ( chopped ) - 3 cloves.
• Crushed chili flakes - 1/4 tea spoon.
• Coriander powder - 1 tea spoon.
• Vegetable oil - 3 tablespoons.
• Salt - to taste.
• Water - as required.
Method:
  • Saute onion and garlic in a little oil until the onion is soft. Add salt and spices.
  • Add chopped swiss chard leaves. (A little water left on the greens from washing them is good, it helps steam them done.)
  • When the greens wilt, add the tomatoes, beans and some of the bean cooking water. Cook for 10 or 15 minutes.
  • The finished dish should be a little saucy, but not soupy. Add water accordingly.

Serve hot.
