Spinach Pulihora - Green Leaf Chitrannam

Ingredients used in Spinach Pulihora - Green Leaf Chitrannam
• Water - as required.
• Rice - 1 cup.
• Oil - as required.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Dry red chilies - 3 number.
• Peanuts - 1 tablespoon.
• Chana dal - 1 tablespoon.
• Garlic - 6 number.
• Ginger - small.
• Hing - 1/2 tea spoon.
• Curry leaves - 3 springs.
• Green chilies - 3 number.
• Onion - 1 number.
• Turmeric powder - 1/2 tea spoon.
• Fenugreek powder - 1/2 tea spoon.
• Sambar powder - 1 tea spoon.
• Tamarind pulp - 1 cup.
• Salt - to taste.
• Spinach (chopped) - 1 bunch.
• Amaranthus leaves (chopped) - 1 bunch.
Method:
  • Boil water in a pan, add rice and cook it.
  • Heat oil in a fresh pan, add mustard seeds, cumin seeds, dry red chilies, when they splutter, add peanuts, chana dal, garlic, chopped ginger, hing, curry leaves andsaute for about 2 to 3 minutes.
  • Now add chopped green chilies, chopped onions, turmeric powder, fenugreek powder and cook it for about 2 to 3 minutes.
  • Then add sambar powder, tamarind pulp, salt,bring it to boil, add chopped spinach, chopped amaranthus, mix well and cook for about 5 minutes.
  • Transfer the cooked rice and toss it.

Delicious Spinach Pulihora is now ready to serve.
