Ingredients used in Spicy Chicken Rice
• Chicken - 800 grams.
• Basmati rice - 2 cups.
• Plain yogurt - 1 cup.
• Red chilli powder - 2 teaspoons.
• Turmeric powder - 1 tea spoon.
• Garam masala - 1 tea spoon.
• Ginger paste - 1 tablespoon.
• Garlic paste - 1 tablespoon.
• Ghee - 2 tablespoons.
• Onion - 2 numbers.
• Coriander leaves - 5 springs.
• Salt - to taste.
• Water - as required.
Method:
  • Make slits on the chicken pieces. In a bowl add yogurt, red chili powder, Garam Masala , half of the ginger-garlic paste, turmeric powder and salt. Rub this paste onto the chicken pieces. Keep aside for about an hour for marination.
  • Heat ghee in a pan and fry onion till it get golen brown in color and keep aside.
  • Heat ghee / butter in a heavy-bottomed pan. Add the remaining ginger-garlic paste, turmeric powder and saute for a few seconds. Add chicken pieces and saute on medium flame for about 2 minutes.
  • Cover and cook on low flame for 12 minutes or till the chicken pieces are half done.
  • Add rice,water and salt. Bring to a boil. Cover and cook on low flamefor another 15 minutes or till the rice is done and all water is evaporated.
  • Garnish with crunchy brown onions and finely chopped coriander leaves.

Serve it hot.
