Singapore chicken rice (Hainnaise chicken)

Ingredients used in Singapore chicken rice (Hainnaise chicken)
• Spring onions chopped - 1/4 cup.
• Garlic (chopped) - 1 tea spoon.
• Pepper corns - 1/2 tea spoon.
• Salt - to taste.
• Garlic - 10-12 cloves.
• Ginger - 50 grams.
• Spring onions (green) - 1 bunch.
• Whole chicken - 1 number.
• Butter - 4 cubes.
• Basmati rice - 1 cup.
• Soya sauce - 2 tablespoons.
• Sesame seed oil - 1 tea spoon.
Method:
  • Take a whole chicken and apply salt, and stuff it with spring onions (green), ginger, garlic and pour the water, cover this and put it in a refrigerate for overnight.
  • Heat water in a big bowl and add whole stuffed chicken, salt put the lid on and cook for 40 minutes in a slow flame, after 40 minutes take out the chicken and cool it down, use chilled water or ice bath.
  • Take some Soya sauce, add sesame seed oil mix it well and coat the chicken, put it in the refrigerator.
  • In the same chicken stock, add peppercorns, garlic, spring onions, butter, salt once come to boil, add basmati rice, once it starts boiling, turn the heat to low and cover, let it simmer for 20 minutes till the rice is done.

Serve this rice with chicken.

I'm so glad you like the chicken rice here. Yum! Usually we add additional chicken fats when cooking the rice. That's where the distinctive fragrance come from. Now I want a plate of chicken rice!
