Ingredients used in QASR-E-PUKHTAN
• Onion(chopped) - 1 number.
• Oil - 5 tablespoons.
• Salt - to taste.
• Pumpkin(chopped) - 1 cup.
• Garlic - 4 numbers.
• Carrot(chopped) - 1/2 number.
• Tomato(chopped) - 1 numbers.
• Ghee - 2 tablespoons.
• Ginger(chopped) - 1 tea spoon.
• Mace - 5 grams.
• Kasuri methi - 1 tea spoon.
• Green chillies(finely chopped) - 1 numbers.
• Red chili powder - 1/2 tablespoon.
• Paneer - 1 cup.
• Turmeric powder - 1/2 tea spoon.
• Tomato puree - 1/2 cup.
• Saffron - 1 pinch.
• Garam masala - 1 pinch.
• Honey - 1/2 tea spoon.
• Cashew nut - 6-8 numbers.
Method:
  • Take a pan and add onion, oil, salt and saute it.
  • Add pumpkin, garlic, tomato, carrot, cashew nut and cook it on the hot flame with lid on it until the vegetables are soft.
  • Transfer it into the blender and make the smooth paste.
  • Heat ghee in a pan and add ginger, mace, kasuri methi, green chillies, red chili powder and saute it.
  • Add paneer, turmeric powder, tomato puree, smooth paste and cook it.
  • To it add saffron soaked in water, garam masala, honey and mix it nicely.

Now the royal dish quzar-e-pukhtan is ready to serve with roti or pulka.
