Ingredients used in Pomfret Chettinad Fish Fry
• Pomfret fish - 1 number.
• Dry red chili - 3 number.
• Pepper corns - 1 tea spoon.
• Chana dal - 1 tea spoon.
• Tamarind - 1 tea spoon.
• Toor dal - 1 tea spoon.
• Cloves - 3 number.
• Cardamom - 3 number.
• Cumin seeds/jeera - 1 tea spoon.
• Coriander seeds - 1 tablespoon.
• Curry leaves - 3 springs.
• Salt - to taste.
• Rice flour - 1 tablespoon.
• Oil - as required.
• Dry coconut pieces - 3 number.
• Urad dal - 1 tea spoon.
Method:
  • Clean the pomfret fish and keep aside as shown in the video.
  • Dry roast dry red chilies, peppercorns, dry coconut pieces, chana dal, coriander seeds, cumin seeds, sauté well, then add urad dal, toor dal, tamarind, curry leaves, sauté it, transfer into a blender and grind to a fine powder.
  • Apply the prepared masalato the fish and sprinkle rice flour on top as shown in the video.
  • Now heat oil in a pan and shallow fry on both sides.
