With respect to Chef, I would add pure vanilla to the batter instead of pineapple essence. It isn't pineapple at all but stuff like amyl acetate and amyl butyrate. At least pure vanilla is a natural flavor derived from vanilla beans.

Also you can use peaches instead of pineapple for peach upside down cake. Upside down cakes were very popular in US at one time, then sadly went out of fashion but YAY they are now making a comeback! Peach upside down is probably my all time fav cak

Ps-I get better results by mixing the butter & brown sugar together first & then using a spatula to spread it like icing. This ensures that topping is spread evenly. I know what desert we are having this weekend! :-D
