This favorite chutney of mine is prepared by roasting red bell peppers, onion and dried red chillies and by blending them including peanuts and tamarind juice.

Ingredients used in Peanut Red Bell pepper chutney
• Coriander leaves - half cup.
• Peanut - 1 cup.
• Red bell pepper - 1 number.
• Mustard seeds - half tablespoon.
• Cumin seeds - half tablespoon.
• Oil - 2 tablespoon.
• Dry red chili - 8 numbers.
• Garlic - 4 cloves.
• Asafoetida (hing) - 2 pinch.
• Tamarind juice - 1 tablespoon.
• Turmeric powder - half tablespoon.
• Salt - to taste.
Method:
  • Heat pan and add oil to it, then add pea nuts and fry till they turn brown.
  • Add red chilli and saute for max 15 secs.
  • Seperate oil and pea nuts, red chilli now and in the same pan and oil, add asafatdia, cumin seeds, mustard seeds and fry on medium flame for half a min
  • Then add choppedbell pepper, toss it for about 2 mins
  • Now add tamarind, salt, turmeric powder, slowly toss them for about 1 min
  • Cover the pan for about 4-6 min on medium heat. Till the bell peppers are just half cooked (not completetly). Let this cool.
  • Add this mxture into mixie jar and grind into coarse paste.
  • Now add chopped corianderand grind it into chutey paste.

Serve with roti or rice.
