Ingredients used in Patra
• Colocasia leaves - 500 grams.
• Gram flour - 800 grams.
• Smashed banana - 3 numbers.
• Tamarind juice - 1 cup.
• Jaggery - 50 grams.
• Lemon - 4 numbers.
• Coriander powder - 1 tablespoons.
• Cumin powder - 4 teaspoons.
• Turmeric - 2 teaspoons.
• Green chilly paste - 1 tablespoons.
• Garlic-ginger paste - 1 tablespoons.
• Asafoetida - as per taste - Asper Taste to.
• Salt - as per taste - As per Taste to.
• Water - as per better's requirement - 700 ml.
• Spices to be coarse ground: 1) carom seeds - 1 t. sp. - 1 teaspoons.
• 2) fennel seeds - 2 t. sp. - 2 teaspoons.
• 3) black pepper - 2 t. sp. - 2 teaspoons.
• 4) cinnamon sticks - 3 pcs. (1 inch each) - 3 piece.
• 5) cloves - 6 to 8 pcs. - 8 clove.
• 6) sesame seeds - 1 tbl. sp. - 1 tablespoons.
Method:
Take Colocassia leaves and wash them thoroughly. Cut its middle thick wain carefully. Keep them aside. Now in a mixing bowl take Gram Flour and add all the spices, given above.Mix it so well and leave it for 5 to 7 minutes that all the spices release their flavor. Finally taste it and now its ready to apply on leaves. If you want to make a thick roll then 6 or 7 rolls can be made. Make sure that your are applying better on Matt side of the leaf. Steam cook them for 30 minutes. After 30 minutes switch of the flame and let it cook in the remaining heat for more 5 minutes. Now its ready to be served in your unique style.
