Ingredients used in Noodle Soup
• Chicken stock - 6 cup.
• Packet clear noodles - 1/2 numbers.
• Ginger (freshly minced ) - 1 1/2 teaspoons.
• Mushrooms (sliced ) - 1/2 cup.
• Carrot (sliced diagonally) - 1 numbers.
• Pepper - to taste.
• Salt - to taste.
• Spring onion (chopped ) - 2 tablespoons.
• Soy sauce - 1 tablespoons.
• Onion (chopped finely) - 1 numbers.
• Snow peas (diagonally cut into pieces) - 1 cup.
• Sesame oil - 1 teaspoons.
• Dry red chilies (crushed ) - 1/4 teaspoons.
• Vegetable oil - 2 tablespoons.
Method:
  • Put crushed chilli and sesame oil and keep aside for at-least1 hour to get the flavour of chilli in oil

  • Now, boil noodles in hot water, by covering it. Then let it stand for 5 minutes

  • Later, drain and run it through cold water. Separate the noodles and let it cool

  • Heat vegetable oil in a wok, add chopped onion, saute for 2 minutes.
  • Add carrots, ginger and stir-fry for another 2-3 minutes.

  • Then add stock, soy sauce to it, bring it to boil.
  • In the same pan, add mushrooms, noodles and salt, boil it for another 2 minutes.

  • Add snow peas, let it boil till snow peas are tender (approx 3-4 minutes).

  • At last, add chilli flavoured sesame oil, pepper. Serve hot while garnishing with spring onion
