Ingredients used in Mutton Indad
• Mutton - 500 grams.
• Cloves - 4 numbers.
• Cinnamon - 1 piece.
• Cumin - 1 tea spoon.
• Green chillies - 5 numbers.
• Ginger (1 inch) - 1 piece.
• Vinegar - 1 tea spoon.
• Red chillies - 5 numbers.
• Turmeric powder - 1 tea spoon.
• Garlic - 3 cloves.
• Potatoes - 3 numbers.
• Oil - as required.
• Salt - to taste.
• Onions - 1 number.
• Stock - as required.
• Sugar - to taste.
Method:
  • Clean and cut meat (mutton).
  • Boil with cinnamon sticks, cloves, and salt until tender.
  • Grind together ginger, turmeric powder, red chilies, garlic, and cumin, using vinegar.
  • Grind onions coarsely.
  • Heat oil, saute onions, spices masala paste, and meat. Fry well.
  • When meat is well-browned add stock, vinegar, and salt to taste.
  • Add potatoes peeled and cut into quarters and slit green chilies. Cook until potatoes are soft.

Serve hot.
