Ingredients used in Mundhiri Sadam or Kaju Rice
• Rice - 2 cup.
• Cashewnuts - 100 grams.
• Red chilies - 4 numbers.
• Dry coconut grated - 2 tablespoons.
• Black gram - 1 tablespoons.
• Bengal gram - 1 tablespoons.
• Mustard seeds - 1 tablespoons.
• Cumin seeds - 1 tablespoons.
• Curry leaves - 2 springs.
• Ghee or oil - 2 tablespoons.
• Salt to taste - 2 pinch.
Method:
  • Wash the rice and soak in water for 20 minutes. Drain and add fresh water 3 & 1/2 cups and cook till done.
  • Dry roast cashew nuts, red chilies, grated (Copra) coconut, Bengal gram, black gram and curry leaves by adding one by one till golden color.
  • Grind together all roasted ingredients into a coarse powder.
  • Heat oil and seasonings with mustard seeds, cumin seeds, when they start crackling add ground powder and salt, stir.
  • At last, add cooked rice, stir gently and serve hot.
