Ingredients used in Moroccan Vegetable Tagine
• Potato - 4 cups.
• Chick peas (kabuli chana) - 1 can.
• Carrot - 2 numbers.
• Onion - half cup.
• Garlic - 5 cloves.
• Zuchhini - 1 number.
• Cumin - 2 teaspoons.
• Tumeric powder - 1 tea spoon.
• Cayenne pepper - 2 teaspoons.
• Tomato paste - 1 can.
• Tvp - half cup.
Method:
  • Heat oil in a pan and lightly saute half crushed garlic and chopped onion and add spices.
  • Now add water,chopped potatoes and carrots.
  • Once it boils for 5 minutes, then add zuchini and rest of garlic. Simmeruntil vegetables are cooked.
  • Now add TVP, tomato paste and mix properly.
  • Add Salt n pepper to taste.

Serve with couscous.
