Ingredients used in Moroccan Chicken Spaghetti
• Chicken wings - 2 lbs.
• Brown onions - 1 lbs.
• Garlic - 1 head.
• Tomatoe passata - 1000 grams.
• Cinnamon - 2 teaspoons.
• Sweet paprika - 2 teaspoons.
• Turmeric - 1 teaspoons.
• Ginger powder - 1/2 teaspoons.
• Sugar - 2 tablespoons.
• Spaghetti - 1000 grams.
• Olive oil (preferably kalamata) - 2-3 tablespoons.
• Salt - - to.
• Black pepper - - to.
Method:
1. Chop each wing in half right through the bone. This lets the flavor from the inside the wing into the sauce quicker. 2. Pour the olive oil into a big pot. Throw in the wings. Fry them on medium flame for 20min. Keep tossing them around. 3. Dice the onions and garlic very small and toss them onto the wings. Keep frying it all together for another 15min till the onions have become soft. 4. Add the Cinnamon, Turmeric, Paprika, ginger powder, salt and pepper to taste. Toss the spices in and fry for about 5 min. 5. Pour the passata into the the pot and stir it into the rest of the ingredients. 6. Throw the sugar onto the sauce and stir it in. 7. Boil the sauce for about 30min and in the mean time cook the spaghetti in salted water with a drop of oil. 8. Serve the sauce on top of the spaghetti.
