Ingredients used in Masala Vankaya
• Ground nut - 4 tablespoons.
• Dry coconut - 15-20 grams.
• Coriander seeds - 1 tablespoon.
• Sesame seeds - 1 tea spoon.
• Water (as required) - 1 cup.
• Eggplant - 8-10 numbers.
• Oil - 2 tablespoons.
• Black cumin seeds - 1/2 tea spoon.
• Onions (chopped) - 1/2 cup.
• Salt - to taste.
• Ginger garlic (paste) - 1/2 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Curry leaves - 1 springs.
• Mint leaves - 10 numbers.
• Red chilly powder - 1 tea spoon.
• Tamarind juice - 1 cup.
• Cumin powder - 1/4 tea spoon.
• Coriander leaves - 1/4 bunch.
Method:
  • Heat pan, add groundnut, dry coconut, coriander seeds and dry roast it.
  • Then add sesame seeds and dry roast it for one minute.
  • Transfer to a plate and allow it cool and blend into smooth paste by adding little water.
  • Heat oil in a pan, add black cumin seeds, onions, a little salt and saute it.
  • Add, ginger garlic paste, turmeric powder, curry leaves, mint leaves and saute it on slow flame.
  • Add red chilly powder, salt, little water, mix nicely and cook with the lid on it for 70% done on slow flame.
  • Add tamarind juice, little water, cumin powder, groundnut mixture paste and mix nicely.
  • Place lid and cook until it is done and check for seasoning, add coriander leaves.

Now masala vankaya is ready to serve.
