Ingredients used in Mangalore Mutton Pepper Fry
• Cloves - 1 number.
• Garam masala powder - 2 tablespoons.
• Turmeric powder - 1 tablespoon.
• Coriander powder - 2 tablespoons.
• Coriander leaves (chopped) - 1/2 cup.
• Double beans - 1/2 cup.
• Chilli paste - 2 tablespoons.
• Ginger garlic paste - 2 tablespoons.
• Onion - 1 cup.
• Mutton - 1 pound.
• Curd - 1 cup.
• Pepper powder - 3 tablespoons.
• Oil - 3 tablespoons.
• Lemon - 1/2 slice.
• Sliced chilli or capsicum or jalapeno - 4 slice.
• Cardamom - 2 numbers.
• Cinnamon - 1 small.
• Salt - to taste.
• Water - as required.
Method:
  • Boil the mutton in a pressure cooker adding little salt and turmeric powder.
  • In a pan , add 2 tablespoon oil, cloves, cardamom, cinnamon stick, onions and fry till it becomes golden brown.
  • Add ginger garlic paste and turmeric powder. fry it for about 2 minutes.
  • Now add double beans. fry It well for about 3 minutes.
  • Now add garam masala , chilli paste, coriander leaves and sliced chillies or capsicum or jalapeno and cook it well.
  • Add curd and turn the flame to high. the curd must be cooked in hight flame for about 2 minutes.
  • Now add coriander powder. fry well.
  • Add boiled mutton along with water, salt if requiredand cook it with a closed lid for about 10 minutes.
  • Sqeeze the lemon juice and garnish it with coriander leaves.

Serve it.

One small comment, Muttun Pepper Fry did not tell wehn to add the main ingredient in the dish "PEPPER"
