Ingredients used in CHICKEN VINDALOO
• Chicken - 500 grams.
• Potato - 200 grams.
• Garlic - 6 cloves.
• Fenugreek seeds - 1/4 tea spoon.
• Red chilies - 8 numbers.
• Vinegar - 2 tablespoons.
• Peppercorns - 10 numbers.
• Cumin seeds - 1 tea spoon.
• Mustard seeds - 1/2 tea spoon.
• Whole garam masala (each) - 2 numbers.
• Tamarind - 10 grams.
• Onion(chopped) - 1 number.
• Salt - to taste.
• Tomato puree - 1 cup.
• Jaggery - 1 tablespoon.
• Turmeric powder - 1/4 tea spoon.
• Coriander seeds - 1/2 tea spoon.
Method:
  • In a mixie jar add garlic cloves, fenugreek seeds, red chilies (soaked in vinegar) and some vinegar, peppercorns, cumin seeds, coriander seeds, mustard seeds, whole garam masala and add a little bit of tamarind, turmeric powder, onions and make a paste.
  • Heat the water in a pan, in this add chicken and potato pieces put the lid on and let it cook for 10 minutes in a medium flame.
  • After 10 minutes know add prepared masala mix well and again put the lid on and let it cook for 10 minutes.
  • In this add tomato puree and salt cook this for few minutes.
  • Then add jaggery mix well and put the lid on and let it cook for 5 minutes.

Switch off the flame and serve this with rice.

this recipe would be better if you marinated the chicken in the spice paste, added the tomato at the beginning, and poached it in much less liquid. you could also add a bay leaf to the cooking liquid.?
