Ingredients used in Kolhapuri Tamda Rassa
• Coriander seeds - 1-2 tablespoons.
• Cinnamon sticks - 4-5 sticks.
• Poppy seeds - 1-2 tablespoons.
• Fennel seeds - 1-1/2 tea spoon.
• Cardamom - 2 numbers.
• Red chillies - 2 numbers.
• Peppercorns - 1 tea spoon.
• Shahi jeera - 1 tea spoon.
• Cloves - 8-9 numbers.
• Onion(chopped) - 1 cup.
• Coconut paste - 2 tablespoons.
• Turmeric powder - 1 tea spoon.
• Mutton - 500 grams.
• Oil - 2 tablespoons.
• Ginger garlic paste - 1 tablespoon.
• Green chillies(chopped) - 1-2 numbers.
• Red chili powder - 1 tablespoon.
• Dry brown grated powder - 1/2 tea spoon.
• Coriander leaves(chopped) - 1 tablespoon.
• Salt - to taste.
• Water - as required.
Method:
  • Kolhapuri masala: In hot pan add coriander seeds, cinnamon sticks, poppy seeds, fennel seeds, cardamom, red chillies, peppercorns, shahi jeera, cloves and roast it.
  • Put these roasted spices in blender and make powder of this kholahpuri masala.
  • Then keep it a side.
  • Paste: In a hot pan add oil, onions and saute it,then add coconut and saute it once again.
  • Then make a paste with the help of blender.
  • In a pressure cooker cook the meat with turmeric powder, then keep it a side.
  • Heat oil in a hot pan then add ginger garlic paste, chopped green chillies, onion & coconut paste and saute it.
  • Then add turmeric powder, red chilli powder mix it and cook it.
  • Now add Mutton with juices, salt then cover with the lid and simmer it 5 minutes.
  • After 5minutes add kholahpuri masala mix it and cook it for 2minutes.
  • Now add dry brown grated coconut mix it and cook it for 2minutes.
  • After 2 minutes add chopped coriander leaves and switch off the flame.

Now the dish is ready to serve.
