Cooked raw mango pieces simmered in a sweet and spicy coconut sauce. Kairas is a combination of two words, kairiras, meaning raw/green mango + juice. This is one of my favorite preparation using green mango.

Indian mango Relish Aam kairas

Ingredients used in Indian mango Relish Aam kairas
• Salt - to taste.
• Raw mango - 1 number.
• Hing - 1/4 tea spoon.
• Curry leaves - 1 spring.
• Fenugreek seeds - 1/4 tea spoon.
• Mustard seeds - 1/2 tea spoon.
• Red chilly - 2 numbers.
• Oil - 2 tablespoons.
• Coconut grated - 1/2 cup.
• Sesame seeds - 1 tablespoon.
• Black gram dal - 1 tablespoon.
• Jaggery - 2 tablespoons.
• Tamarind juice - 1/2 cup.
Method:
  • In a pan add black gram daal, sesame seeds dry roast them, add coconut powder cook this until golden in colour.
  • Switch off the flame and make a coarse powder.
  • Heat oil in a pan add red chilly, mustard, fenugreek seeds, add curry leaves, a pinch of hing, raw mango (cut into small pieces) saute this.
  • Add salt, jaggery and add water put the lid on cook for some time, then add tamarind juice, cook it and switch off the flame.
