HIMACHALI SIDDU WITH SPRING ONION AND GARLIC CHUTNEY

Ingredients used in HIMACHALI SIDDU WITH SPRING ONION AND GARLIC CHUTNEY
• Whole wheat bowl - 1/2 cup.
• Salt - to taste.
• Carom seeds (ajwain) - 1/4 tea spoon.
• Ginger garlic paste - 1 tablespoon.
• Dried yeast - 3 grams.
• Water - 1 cup.
• Oil - 2 teaspoons.
• Sweet corn - 1/4 cup.
• Green chili paste - 1 tablespoon.
• Coriander powder - 1/2 tea spoon.
• Turmeric powder - 1 pinch.
• Cumin powder - 1 pinch.
• Red chilli powder - 1 pinch.
• Potatoes (boiled small dices) - 1 cup.
• Garam masala - 1 pinch.
• Lime juice - 2 tablespoons.
• Coriander leaves - 1 bunch.
• White spring onion(chopped) - 2 tablespoons.
• Green spring onion(chopped) - 2 tablespoons.
• Green chilies - 3 numbers.
• Garlic - 7-8 numbers.
• Ice cubes - 2 numbers.
Method:
  • Take a bowl add whole wheat flour, salt, carom seeds, ginger garlic paste, dry yeast, little water, oil and mix it like a dough and rest it.
  • In a hot pan add oil, sweet corn, green chili paste, coriander powder, turmeric powder, cumin powder, red chili powder, boiled potatoes, salt and saute it.
  • Then add garam masala, lime juice, coriander leaves and saute it, later transfer in to a plate.
  • Take the steamer add water, then keep a colander then a plate on top of it and leave it for steaming.
  • Now divide the dough into small portions and roll it like a roti and add the stuffing mixture in this.
  • Now the siddu dish is ready to steam
  • Then place siddu into the steamer and leave it for 15-20minutes.
  • When it is cooked take out the siddu.
  • Transfer into a plate and apply ghee to it.

For chutney:

  • Take a mixie jar add spring onions, green onions, green chilies, garlic, coriander leaves, lime juice, onions, ice cubes and crush it.

Now the chutney is ready to serve with siddu.
