Grilled Shrimp on Sugarcane is an awesome kebab dish made with shrimp and other spices, seasonings blended to a firm batter. The batter rolled over sugarcane sticks and pan fried or grilled.

These fragrant grilled savory-sweet dish is a classic Vietnamese appetizer/party food. Perfect for noshing with friends along with a cold beer or dry white wine.

Grilled Shrimp on Sugarcane

Ingredients used in Grilled Shrimp on Sugarcane
• Shrimp - 350 grams.
• Onion - 2 number.
• Garlic - 1 tea spoon.
• Egg - 2 numbers.
• Fish sauce - 1 tablespoon.
• Corn flour - 1 tablespoon.
• Jaggery - 1 tea spoon.
• Pepper powder - 1 tea spoon.
• Coriander leaves - 1 bunch.
• Spring onion - half cup.
• Sugarcane - 1 number.
• Lime rind - 1/4 tea spoon.
• Bread crumb - 2 tablespoon.
• Oil - to fry.
• Salt - to taste.
Method:
  • In a blender, add rind of the lime, spring onions, coriander leaves, pepper powder, salt, corn flour, fish sauce, shrimp and blend into a coarse paste.
  • In the paste add egg and blend it again. Transfer into a bowl.
  • Now add finely chopped garlic, onions, jaggeryand mix it properly.
  • Then add bread crumb(optional), mix well, Cut the sugarcane lengthwise into thin sticks, and apply shrimp mixture to make kababs. (As shown in video)
  • Heat oil in griddle and fry kababs from all sides on low flame,

Serve hot.

I used to have these a lot when I was a kid. I grew up and totally forgot about this dish. Awesome job chef. You just brought back my memories from childhood. Will definitely make them as soon as I can find the sugar cane. :D
