This pasta salad is so colorful, full of vibrant flavor and it makes a TON. Basically, it’s the perfect pasta for summer BBQs, potlucks or picnics. The medley of grilled vegetables and balsamic vinaigrette bring so much flavor to this seemingly simple salad. You can use any vegetables that are in season.

Ingredients used in Grilled Pasta Salad
• Balsamic vinegar - 1.5 cups.
• Olive oil - half cup.
• Rice syrup - half cup.
• Fresh oregano (chopped) - 1/3 cup.
• Fresh sage (chopped) - 1/3 cup.
• All-spice powder - half tea spoon.
• Cumin powderh - half tea spoon.
• Onion (chopped) - 2 numbers.
• Zucchini (trimmed) - 3 numbers.
• Eggplants (trimmed) - 3 numbers.
• Red bell pepper - 2 numbers.
• Pasta - 500 grams.
• Salt - to taste.
• Mustard seeds - 1/4 tea spoon.
Method:
  • Marinate all the vegetables for at least one hour in mixture. Grill this indoors or outdoors.
  • Cook pasta .
  • Take some crushed garlic, mix in some balsamic vinegar, salt, pepper, mustard, small amountt of olive oil .
  • Toss with pasta that has been cooked.
  • When all the vegetables are grilled, cool for awhile and then chop them slightly and add to the salad.
  • Optional:add some sliced black olives.
