Ingredients used in GONGURA RICE
• Gongura (sorrel leaves) - 5 bunch.
• Salt - to taste.
• Oil - as required.
• Mustard seeds - 1/2 tea spoon.
• Cumin seeds - 1/2 tea spoon.
• Red chilli - 3 numbers.
• Chana dal - 1 tea spoon.
• Urad dal - 1 tea spoon.
• Cashew nuts - 10 numbers.
• Hing - 1 pinch.
• Green chilli - 3 numbers.
• Onions (sliced) - 1 number.
• Coconut (grated) - 1/4 cup.
• Methi seeds - 1/2 tea spoon.
• Turmeric - 1/2 tea spoon.
• Curry leaves - 1 springs.
• Cooked rice - 2 cups.
Method:
Heat oil in a pan and add methi seeds, sorrel leaves, salt, mix it and cook till Gongora leaves are tender and cooked. Let it cool down make it into a smooth paste. In the same pan heat oil and add mustard seeds, cumin seeds, red chili, chana dal, mix it. Then add urad dal, cashew nuts, hing, green chili, sliced onions, salt, turmeric powder, curry leaves, saute it for 2 minutes then add Gongora paste, saute it for a minute and add cooked rice mix it well. Finally add freshly grated coconut mix it well. Serve hot.
