Ingredients used in Endu Chapala Mukkala pulusu
• Dry fish/endu chapalu - 3 number.
• Oil - as required.
• Onion (chopped) - 1 number.
• Salt - to taste.
• Red chili powder - 1 tea spoon.
• Drumstick (chopped) - 1 number.
• Brinjal (cut into cubes) - 1/2 cup.
• Ridge gourd (cut into cubes) - 1/2 cup.
• Potatoes (cut into cubes) - 1 number.
• Rajma - 1/4 cup.
• Water - as required.
• Tamarind pulp - 1/2 cup.
• Green chilies (chopped) - 3 number.
• Coriander powder - 1 tea spoon.
• Mustard seeds - 1 tea spoon.
• Cumin seeds - 1 tea spoon.
• Curry leaves - 2 springs.
Method:
  • Clean the dry fish, soak them in water and keep aside.
  • Heat oil in a pan, add chopped onions, salt, turmeric powder and saute till onions turn slightly transparent.
  • Now add red chili powder, chopped drumsticks, brinjal, ridge gourd, potatoes, rajma and any other vegetables of your choice along with 1 cup of water, cook well by stirring occasionally on slow flame.
  • Once vegetables get completely cooked add tamarind pulp, green chilies, coriander powder and bring it to boil (stir fry)
  • Later add soaked dry fishesand mix well.
  • Now heat oil in a pan, add mustard seeds, cumin seeds, curry leaves, and saute for half a minute.
  • Then, transfer this tempering to above pan and give it a mix.

Hot and spicy Endu Chapala Mukkala Pulusu is now ready to serve.
