EGGPLANT POTATO CURRY WITH ONION TOMATO GRAVY -BRINJAL ALOO

Ingredients used in EGGPLANT POTATO CURRY WITH ONION TOMATO GRAVY -BRINJAL ALOO
• Onions - 1000 grams.
• Tomatoes - 1000 grams.
• Oil - 1+1/2 cup.
• Salt - to taste.
• Ginger garlic paste - 2 teaspoons.
• Red chili powder - 1 cup.
• Coriander powder - 1 cup.
• Cumin powder - 1 tablespoons.
• Turmeric powder - 1 tablespoons.
• Mustard seeds - 1/4 tea spoon.
• Cumin seeds - 1/4 tea spoon.
• Eggplant - 150 grams.
• Potatoes - 150 grams.
• Coriander leaves chopped - 1/2 bunch.
• Mint leaves chopped - 1/2 bunch.
Method:
  • Heat 1 cup oil in a pressure cooker add onions, salt, sauté it.
  • Then add ginger garlic paste, tomatoes, turmeric powder, red chili powder, cumin powder, coriander powder, mix this and put the lid on.
  • Let it cook for 15 to 20 minutes in a slow flame (4 to 5 whistles), use this gravy in many veg and non veg curries.
  • Heat 3 tbs oil in a pan add mustard seeds, when mustard seeds splutter, add cumin seeds and saute it.
  • Then add eggplant pieces, salt, mix it well and put the lid on to cook for 3 minutes then add water and again put the lid on then let it cook till eggplant is tender.
  • Now add 1 cup onion gravy and cook this for few minutes.
  • Then add potatoes (boiled) and cook for 5 minutes then switch off the flame.
  • Add chopped coriander leaves and mint leaves. Serve this hot with roti or rice.

how long can the gravy stay in d fridge without gettin spoilt? I hardly get time to cook properly coz of my baby so ths would help me heaps... also thx for the mirchi ka salan tip as I deep freeze the sesame n peanut paste too and it stays perfect n
