DRY SHRIMP WITH BRINJAL

Ingredients used in DRY SHRIMP WITH BRINJAL
• Dry shrimp - 1 cup.
• Oil - 1 tablespoon.
• Mustard seeds - 1/2 tea spoon.
• Onions(chopped) - 1/2 cup.
• Salt - to taste.
• Ginger garlic paste - 1/2 tea spoon.
• Turmeric powder - 1/4 tea spoon.
• Curry leaves - 1 spring.
• Eggplant(long pieces) - 1 cup.
• Tomato(chopped) - 1/2 cup.
• Coriander powder - 1/4 tea spoon.
• Red chili powder - 1 tea spoon.
• Cumin powder - 1/4 tea spoon.
• Coriander leaves(chopped) - 1 tablespoons.
• Lime juice - 1 tea spoon.
Method:
  • Take a pan and add water, dry shrimp then boil it.
  • Heat oil in a pan and add mustard seeds, onions, a little salt, ginger garlic paste, turmeric powder, curry leaves and saute it.
  • Add eggplant slices, tomato, coriander powder, red chili powder, cumin powder, a little salt and cook it for 2 minutes with the lid on it.
  • To it add boiled shrimp, little water and mix it, later cook for 3 minutes.
  • At last, add coriander leaves and switch off the flame, add lime juice and mix it.

Now dry shrimp with brinjal is ready to serve.
